Kikes Red Tacos

Kiké's Red Tacos is a family-owned Denver restaurant founded in 2020 by the Silva Gonzalez family, who bet their savings on a food truck built around birria — the slow-cooked Mexican stew that sons grew up eating at home. Starting with no brick-and-mortar location, the family won Denver's 2022 March Madness Taco Bracket with 71% of the vote over 31 competitors before opening their LoHi restaurant. Their birria, simmered for eight hours using a protected family recipe, is served in tacos, quesadillas, burritos, and even ramen bowls.
