La Lola Taco

La Lola Taco opened in Murray, Utah in January 2026, founded by chef Luis Perez, whose Southern California taqueria Lola Gaspar earned a MICHELIN Bib Gourmand recognition in 2024 and whose tacos were listed among the 101 best in Los Angeles by the Los Angeles Times. The fast-casual restaurant brings L.A. taco culture to the Salt Lake Valley with open-flame proteins, farmers market vegetables, and tortillas made daily from heirloom blue corn imported from New Mexico farms. Handmade whole corn masa tortillas and meticulous sourcing are central to the concept.
