Mampuku Ramen is a family-run ramen shop in Santa Fe, New Mexico, opened by Ayame Fukuda — whose family also operates Albuquerque's Naruto noodle restaurant — drawing on macrobiotic cooking philosophy and recipes from ramen mentor Kenichi Ota. Signature bowls include a black garlic tonkotsu ramen with scratch-made pork bone broth and a curry ramen topped with beef brisket, all made with broths simmered from scratch daily.
