Molino Chido

Molino Chido is a Mexico City-inspired taquería opened in November 2025 inside Stanley Marketplace in Aurora, Colorado, created by acclaimed Denver chefs Michael Diaz de Leon — who previously earned Brutø its first Michelin star in 2023 — and restaurateur Tommy Lee of Hop Alley fame. The restaurant mills its own nixtamalized corn into masa daily, producing 2,000 handmade tortillas from Ute Tribe-sourced corn, and offers inventive tacos including al pastor, lengua, and pavo with Yucatecan recado negro.
