Chris Bianco's wood-fired pizzeria at Heritage Square helped define the artisanal pizza movement in America and has been the benchmark for Phoenix pizza since the early 1990s. The Rosa, topped with red onion, rosemary, Parmigiano-Reggiano, and pistachios, is the most imitated pie in the state. The intimate dining room fills nightly with locals and travelers willing to wait for a table in one of the few spots where the chef still works the oven himself.
