Salt and Smoke opened its original Delmar Loop location in University City, Missouri on June 13, 2014, when owner Tom Schmidt and pitmaster Haley Riley converted their upscale bistro Nico into a BBQ smokehouse in just five days. The restaurant has grown into a five-location St. Louis institution recognized for elevated barbecue made entirely from scratch, and has been featured on the Food Network.
