Salt City Barbecue is a Salt Lake City food truck and restaurant founded by pitmaster Rusty Monson, whose competition BBQ career produced two Grand Championships and four Reserve Grand Championships before he transitioned to serving the public. The operation uses only USDA Prime brisket, smokes meats over white oak for up to 18 hours, and makes all sauces, sides, and rubs from scratch, with a mission of bringing championship-caliber BBQ to Utah.
