Santa Fe BK opened in Williamsburg, Brooklyn in October 2021, founded by John Watterberg and Melissa Klein to bring authentic New Mexican cuisine — distinct from Tex-Mex — to New York City. Watterberg, originally from Albuquerque, describes the food as his family's heritage, centered on Hatch green chiles. The restaurant is known for its Southwestern breakfast burritos, hand-muddled margaritas with house-infused tequilas, and chef Klein's scratch-made recipes developed during time spent in Arizona.
