Star Noodle opened in February 2010 in Lahaina, Maui, founded by Michael Moore, Robert Aguiar, and Tim Moore under the restaurant group Nā Hoaloha ʻEkolu, which also operates Old Lāhainā Lūʻau and Aloha Mixed Plate. The Asian fusion restaurant, which helped launch the career of Top Chef fan favorite Sheldon Simeon, is celebrated for its house-made noodles and share plates. At the 2025 'Aipono Awards, Star Noodle earned gold for Best Asian Cuisine and Best Noodles on Maui.
