Sushi Hayakawa was founded in 2008 on Buford Highway by Chef Atsushi Hayakawa, a native of Hokkaido who began his sushi apprenticeship at age 15 in Sapporo and immigrated to the United States in 1991. The restaurant relocated to 1055 Howell Mill Road in West Midtown Atlanta in 2022, rebranding as Hayakawa, and has held a Michelin one-star rating for 2023, 2024, and 2025. Chef Hayakawa has been a James Beard Award semifinalist for Best Chef Southeast in 2018 and Outstanding Chef in 2024.
