Tops Bar-B-Q was founded in Memphis, Tennessee in 1952 by J.W. Lawson, who opened his first location on Macon Road aiming to serve Memphis's best barbecue. The chain's signature is slow-cooked pork shoulder over open pit fires using hardwood charcoal and green hickory wood for eight to ten hours, and its chopped pork BBQ sandwich sets it apart from the pulled-pork style served elsewhere in the city. Now with 17 locations across the Memphis area, Tops has been serving loyal customers across four generations.
