Uncle

Uncle is a ramen shop founded in Denver's Highlands neighborhood by Tommy Lee, a Denver native whose parents are from Hong Kong. Lee, a self-taught cook, opened the restaurant around 2012 after wanting to bring a style of dining Denver lacked, and his signature chicken ramen — featuring chicken confit in a spicy sesame broth — was developed accidentally during a staff meal. A second location in the West Wash Park neighborhood opened in 2019.
