Wood Shop BBQ was launched in Seattle in 2014 by James Barrington and Matt Davis, who drove to Texas to purchase their first offset smoker — which they named Brad Pit — before debuting their food truck in December of that year. The permanent brick-and-mortar restaurant opened on January 21, 2017, at 2513 S Jackson Street in Seattle's Central District, specializing in a fusion of Kansas City-style pork and Central Texas-style brisket smoked over hickory and post oak. The restaurant was featured on Food Network's Diners, Drive-Ins and Dives.
