Zundo Ramen and Donburi in Cincinnati's Over-the-Rhine neighborhood was opened in 2018 by chef Han Lin, a Chinese-born cook who developed a passion for Japanese cuisine while studying in Tokyo and later spent three years perfecting his broth recipes before launching the restaurant. Han Lin also owns Mei Japanese Restaurant in Montgomery (established 2000), and Zundo's signature approach centers on a pork-bone or vegetable broth simmered for half a day, served across a menu of tonkotsu ramen, tantanmen, and eight varieties of donburi rice bowls.
