Birria El Rey is a San Diego restaurant founded by chef and owner Cristian Marin Vazquez, a Culinary Art School of Tijuana graduate who launched the concept as a Sunday pop-up in Golden Hill in 2020 after the pandemic left him unemployed. Vazquez grew the operation from a sidewalk setup into a brick-and-mortar location at 1128 25th Street, specializing in authentic Jalisco-style birria tacos with hand-pressed tortillas, rich consommé, and made-from-scratch recipes.
