
Bolton's Spicy Chicken and Fish
Bolton's Spicy Chicken and Fish is a historic Nashville hot chicken institution on Main Street in East Nashville, opened in 1997 by Bolton Matthews and Dolly Ingram using a spicy chicken recipe passed down from Matthews's uncle, the late Bolton Polk, who ran his own legendary hot chicken operation. Recognized by the Southern Foodways Alliance as a Nashville Food Heritage Site and one of only two pre-hot-chicken-boom original shacks still operating alongside Prince's, Bolton's is known for slow-building, cast-iron-fried heat and the only fried fish in the city prepared with a traditional hot spice blend.
