Brick Fire Tavern opened in Honolulu in 2016, founded by Inthira Marks and Matthew Resich after Resich spent two months in Naples training under master pizzaiolo Enzo Coccia, a founding member of the Associazione Vera Pizza Napoletana. Pies are fired in a 900-degree custom wood-burning oven in under 90 seconds, with creative toppings featuring local Hawaiian ingredients from Wai'anae farms and Mari's Gardens.
