Carolina's Mexican Food is a Phoenix institution founded in 1968 by Manuel and Carolina Valenzuela, whose family began by selling homemade tortillas and tamales from the back of their car in the 1950s. The restaurant is especially revered for its paper-thin flour tortillas — described by critics as 'thin-as-air' — and its green chile burros, which have remained unchanged for over 55 years. Now with multiple Valley locations, Carolina's remains one of the most authentic and beloved Mexican food destinations in the Southwest.
