Fogón Cocina Mexicana, named for the traditional wood-fired fogón stove, is Capitol Hill's most popular Mexican restaurant according to the Seattle Post-Intelligencer, and was named one of Seattle Metropolitan's Best Restaurants on Capitol Hill. Co-founded by Noel Cortez and the late Jose Ambriz, the restaurant is celebrated for house-made tortillas, family recipes, and fresh lime margaritas crafted from scratch. The 110-seat space features an open tortilla-making station at its heart.
