Tacos Chukis

Tacos Chukis was founded in 2011 by Roberto Salmerón, a Tijuana native and University of Washington graduate, who opened a small upstairs restaurant on Capitol Hill in Seattle serving affordable Tijuana-style tacos. The al pastor tacos — slow-cooked pork on a vertical spit served with grilled pineapple — became the restaurant's signature dish, and Thrillist named it the best taco spot in Washington State in 2018.
