Ichiran is a Japanese tonkotsu ramen chain founded in Fukuoka in 1960 that pioneered solo dining via individual flavor-concentration booths, where diners customize their bowl on a paper form and receive ramen through a curtained window to maximize focus on the food. The chain opened its first U.S. location in Bushwick, Brooklyn in 2016 and has since expanded to multiple New York City locations, bringing its cult following and signature rich pork-bone broth to American audiences.
