Tonchin was founded in Tokyo in 1992 by brothers Katsuhiro and Motohiro Sugeno, who built their reputation over 25 years on a distinctive Tokyo tonkotsu broth made with pork bones, chicken, and dashi. Katsuhiro's son, Anan Sugeno, brought the brand to New York in November 2017, opening a Midtown flagship at 13 W. 36th St. The New York location has earned a Michelin Bib Gourmand and has since expanded to Brooklyn and Los Angeles.
