Kayava is an artisanal ramen restaurant that opened in Seattle's Fremont neighborhood on October 3, 2024, operated by Plenus Co. — the Japanese hospitality group behind Hotto Motto and Yayoi Ken — under the culinary supervision of ramen chef Masuo Onishi of the acclaimed Tsurumen restaurant group. Onishi, who opened his original Tsurumen restaurant in Osaka in 2007 and later brought the concept to Boston in 2018, brings a traditional broth-forward approach to Seattle, preparing soup daily from fresh local chicken and pork. Signature bowls include a gluten-free Chicken Paitan, Truffle Shantan, and Pork Shoyu ramen.
