La Gloria opened in May 2010 at San Antonio's historic Pearl Brewery, founded by chef Johnny Hernandez, a Culinary Institute of America graduate who has been recognized as one of the premier Mexican cuisine chefs in the United States. The restaurant celebrates interior Mexican street foods — from tacos al pastor to Veracruz-style ceviche — and operates its own tortillería, Tortillería La Gloria, using traditional old-world methods. Chef Hernandez has appeared as a guest judge on Bravo's Top Chef and cooked at the White House for President Obama in 2016.
