Lexington Betty Smokehouse was founded in 2016 by classically trained chef Dominique Leach, inspired by her grandmother Betty King of Lexington, Mississippi, who grew up in prestigious Chicago kitchens including the Michelin-starred Spiaggia. The South Side Chicago restaurant is one of the only spots on that side of the city to serve Central Texas-style brisket alongside soulful sides, and Chef Leach has appeared on Food Network's Chopped and as a judge on Food Network Canada's Fire Masters. Good Morning America named Lexington Betty Smokehouse the Best Barbecue in Chicago.
