Los Chapos Tacos

Los Chapos Tacos started in 2020 as a food truck founded by Christopher Rodriguez, inspired by a trip to Mexico City, and has since expanded to five locations across the Tampa Bay area. Slow-braised birria tacos — simmered four hours with authentic Mexican chiles and served with rich consomé — are the flagship dish, along with trompo-roasted al pastor and fresh-pressed tortillas. The brand has earned "Best of the Bay" recognition and TV coverage on FOX 13 Tampa Bay for its commitment to authentic Mexican street food and sustainable, compostable packaging.
