Los Tapatios Taco Grill was established in 2020 in Salt Lake City by two brothers from Guadalajara, Jalisco, who brought their grandmothers' birria recipe — a Sunday tradition from the mountains of Jalisco — to Utah. Every dish on the menu is built around their slow-cooked birria, which marinates for 24 hours and braises for five to six hours; highlights include crispy cheese birria tacos, birria ramen, and all-day chilaquiles. The restaurant now operates three locations across Salt Lake City, Rose Park, and Taylorsville.
