Saru Sushi Bar opened in 2012 in San Francisco's Noe Valley, founded by chef Billy Kong, who was born in Hong Kong and solidified his passion for Japanese cuisine through a backpacking trip across Japan. The intimate bar occupies what is said to be the oldest Japanese restaurant spot in the city and is recognized in the Michelin Guide for its dedication to quality and craftsmanship. Kong's broader restaurant group has earned additional Michelin stars at sister concepts including the Saru Handroll Bar.
