Sushi Sho Honolulu opened in 2016 inside the Ritz-Carlton Residences Waikiki Beach, serving as the first international outpost of Chef Keiji Nakazawa, who began his culinary career in 1978 and built his Tokyo restaurant into a pilgrimage destination for sushi connoisseurs worldwide. The 16-seat counter restaurant offers a 30-plus course Edomae-style omakase featuring aged and cured fish alongside multiple seasoned rice varieties. At least 20 of Nakazawa's apprentices have gone on to open their own restaurants, with at least three earning Michelin stars.
