Carson Kitchen is a Downtown Las Vegas cornerstone opened in 2014 by chef Kerry Simon — nicknamed the 'Rock 'n' Roll Chef' by Rolling Stone — and his partner Cory Harwell in the historic Fremont East district. Named Best New Restaurant in Las Vegas in its opening year and praised by the New York Times, the restaurant built its reputation on reimagined American comfort food, including a burger that beat Cat Cora on Iron Chef. After Simon's passing in 2015, Harwell has kept his culinary legacy alive through the menu and the memorabilia-filled dining room.
