Chef Myo Htun trained under a master ramen chef in Tokyo for nearly three decades before bringing his craft to Shaw, where Chaplin's combines a 1920s Prohibition speakeasy aesthetic with some of the most technically accomplished ramen in the city. The Stamina Spicy Ramen, with sliced pork, miso, and building heat, is the signature bowl, but cold summer ramen options with springy noodles and zesty ginger show the kitchen's full range. The dog-friendly patio and craft cocktail program make it equally viable as a destination for drinks or dinner.
