Daikaya opened in Washington, DC on February 14, 2013, founded by Chef Katsuya Fukushima (formerly of José Andrés' Michelin-starred Minibar) along with partners Daisuke Utagawa and Yama Jewayni. The restaurant specializes in authentic Sapporo-style ramen, importing its noodles directly from the Nishiyama Seimen factory in Sapporo, Japan. Widely credited with popularizing ramen culture in DC, Daikaya operates a ground-floor ramen shop and a second-floor izakaya, and has since grown into a multi-restaurant group.
