Toki Underground opened in 2011 on H Street NE when Taiwanese-American chef Erik Bruner-Yang launched this compact, 30-seat ramen shop above a bar. Drawing on his childhood years in Japan and Taiwan, Bruner-Yang created a Taiwanese-inflected ramen that won Eater's Restaurant of the Year in its debut year and has earned a Michelin Bib Gourmand every year since 2018. A Baltimore location opened in 2024 under new ownership.
