Kabuto Edomae Sushi opened in Las Vegas's Chinatown in 2012, founded by Tokyo-born chef Gen Mizoguchi, who trained under Mitsuo Endo at New York's Megu before relocating to the Nevada desert. The restaurant was named one of Bon Appétit's Best New Restaurants of 2012 and quickly became regarded as among the finest sushi experiences in Las Vegas, featuring rare fish flown in directly from Japan and served in an intimate omakase setting. Now under the Mon Restaurant Group, Kabuto continues to offer a traditional Edomae-style omakase at a price point well below comparable Strip establishments.
