SUSHISAMBA was founded in New York City in 1999 by Shimon Bokovza, inspired by the cultural fusion of Japanese workers who immigrated to South America, blending Japanese, Brazilian, and Peruvian culinary traditions. The Las Vegas location opened in 2008 inside the Palazzo at The Venetian Resort, featuring a dramatic 125-foot curved bar and a theater-style dining room. The brand has since grown to 11 locations across three continents and eight countries.
