Ltd Edition Sushi

Ltd Edition Sushi opened in July 2021 on Capitol Hill in Seattle, founded by Keiji Tsukasaki and joined by executive chef Jun Kobayashi, a former head sushi chef at the legendary Shiro's. The omakase-only experience seats just ten guests per service and limits orders to 30 per day, sourcing fish locally and from Tokyo's Toyosu Market to offer a seasonal, ever-changing nigiri menu with standouts like Dungeness crab nigiri topped with its own gelatin. The New York Times named it one of America's 50 best restaurants in 2023, and the Seattle Times praised the sushi as so good "it will make you cry."
