Shiro's Sushi opened in 1995 in Seattle's Belltown neighborhood, founded by Master Chef Shiro Kashiba, who had trained under legendary sushi maestro Jiro Ono in Tokyo and introduced Edomae-style sushi to Seattle in 1967. Kashiba received three James Beard Award nominations for Outstanding Chef, and the restaurant's focus on Pacific Northwest seafood set the standard for Japanese cuisine in the Pacific Northwest.
