Rubirosa opened in 2009 in Manhattan's Nolita neighborhood, founded by AJ Pappalardo using a 57-year-old family thin-crust pizza recipe from his father's legendary Staten Island pizzeria Joe & Pat's, which has been in the Pappalardo family since 1960. Now operated by AJ's sister Maria Pappalardo and partner Bari Musacchio, Rubirosa holds a Michelin Bib Gourmand and has been named one of the best pizza restaurants in the U.S. by Food & Wine.
