Starlite

Starlite opened in 2007 at 3175 India Street in San Diego's Middletown neighborhood, founded by Matt Hoyt and Tim Mays as one of San Diego's first craft cocktail gastropubs. The bar helped popularize the Moscow Mule in Southern California and won an Orchid award for interior design in 2009, noted for its cathedral-like cave ceiling and Frank Lloyd Wright-inspired details. After founder Hoyt's death in 2021, CH Projects acquired the venue and completed a major renovation, reopening it in 2025.
