Tacos El Gordo is a Tijuana-rooted taqueria chain that opened its first location in 1972 in Tijuana, expanded to San Diego in 1998, and brought its Las Vegas Strip location in 2010. The restaurant is celebrated for its authentic adobada — spiced pork carved directly from a vertical trompo — along with handmade corn tortillas, carne asada, buche, and lengua; the Strip location regularly draws hour-long waits.
