Tomasita's traces its roots to 1974, when Georgia Maryol took over a tiny Santa Fe café run by cook Tomasita Leyba and kept her traditional New Mexican recipes alive. The flagship relocated to a historic railroad depot at 500 S. Guadalupe St. in 1979, and a second location opened in Albuquerque in 2017. Celebrating 50 years in 2024, the restaurant remains family-owned and is widely regarded as one of New Mexico's best traditional New Mexican restaurants.
