西贝 XIBEI Dumplings traces its roots to China's XIBEI Catering Group, founded in 1988, which operates nearly 400 restaurants across China serving Northwestern Chinese cuisine. The Silver Lake, Los Angeles location — opened in 2024 as the brand's first U.S. outpost — specializes in shaomai, a handmade lamb-and-onion steamed dumpling tradition carried by fifth-generation craft inheritor Chef Meng Defei, alongside crystal noodles, corn pancakes, and Chinese burgers.
